Enough With the Leftovers

After a long week of energy and excitement with ESPN College GameDay at James Madison University, everyone is in the recovery mode.
On Saturday, Oct. 24, campus was filled with purple and school spirit. However, after all the preparation for the tailgate and food that people brought, there are leftovers.

I have so many leftovers in my refrigerator that I do not know what to do with. Which made me decide to find what else I could do with the food.
If you’re in the same position as me or will be in the future, than I hope this helps you too.
Leftover Burgers? Chop up the cooked hamburger meat and add it to a slow cooker along with onions, garlic, canned crushed tomatoes, tomato paste, dry basil and oregano, and cook on low heat for 6 hours for a super easy and tasty spaghetti meat sauce.
Chicken and tortilla chips leftover? Cut up the chicken and throw it in a slow cooker long with onions, jalapenos, enchilada sauce, diced tomatoes, corn, garlic, cumin and chicken broth, and cook on low heat for 6 hours. Garnish with crunched up tortilla chips.
Leftover brats? No worries. They go amazing when heated in a skillet the next day, and served with eggs for breakfast – after all, it is a sausage.
